Instant Pot Pineapple Bourbon Glazed Ham

It seems that winter is finally loosening its grip on us here in Canada. With the Spring Equinox only ten days away, my thoughts have been turning to warmer weather and brighter days.

With the pending change in seasons, I have also started thinking about Easter (which is 34 days away, in case you were wondering). All of the big holidays in our family have food traditions, and Easter almost always means ham and scalloped potatoes. This Instant Pot Pineapple Bourbon Glazed Ham provides a new (and incredibly easy) twist to an old classic.

Prepare the Glaze

In a bowl, combine the brown sugar, maple syrup, and bourbon. Mix well and break up any clumps of brown sugar. Add the minced garlic, clove, cinnamon, and pepper. Stir in the pineapple and juice.

Place the ham on aluminum foil. Slice the ham 3/4 of the way through, spreading the slices apart slightly. Pour the glaze over the ham, making sure it gets between the slices. Wrap the ham in the foil, ensuring no liquid can escape.

Cooking the Ham

Place 2 cups of water into the bottom of the Instant Pot, followed by the trivet. If your trivet does not have handles, I suggest using a silicone sling, or making one out of foil. Place the wrapped ham on the trivet.

Put the lid on the Instant Pot, turn the knob to Sealing, and set to High Pressure for 15 minutes.

When the time is up, do a quick release. When the pressure has been fully vented, carefully pull the package of ham out of the Instant Pot. Dump the remaining water out of the pot, and return it to the base. Wrap the ham back up in the foil to keep it warm while you finish the glaze.

Finishing the Ham

Slice the ham the remainder of the way through. Spoon the glaze and pineapple over top. Serve the Instant Pot Pineapple Bourbon Glazed Ham with sides of choice. I served mine with cheesy bacon scalloped potatoes, and glazed carrots.

Ingredients

  • 3-6 lbs ham (depending on number of people)
  • 3/4 cup brown sugar
  • 1/4 cup maple syrup
  • 2 tbsp bourbon (can be omitted)
  • 1/2 tsp minced garlic
  • 1/2 cup pineapple chunks and their juice
  • 1/8 tsp ground clove
  • 1/8 tsp ground cinnamon
  • 1/8 tsp black pepper

Instructions

  • Slice ham 3/4 of the way through and place on foil
  • Combine brown sugar, maple syrup, and bourbon in a bowl. Mix and break up any clumps of brown sugar. Add garlic, cloves, cinnamon, and pepper. Stir in the pineapple chunks and juice until everything is combined.
  • Pour the glaze over the ham, ensuring it goes between slices, and wrap ham in foil.
  • Pour 2 cups of water into the bottom of the Instant Pot, and place trivet in bottom. Place wrapped ham on top of the trivet (use silicone sling if necessary).
  • Put the lid on the Instant Pot, turn the knob to Sealing, and set to High Pressure for 15 minutes
  • When the time is up, do a quick release. When pressure is vented, remove the ham packet, and dump the water from the pot.
  • Transfer the glaze and pineapple to the pot, and turn on the Saute function. Wrap the ham in the foil to keep warm. Cook the glaze until it reduced and thicken to a more syrup-like consistency.
  • Slice the ham the remainder of the way through, and pour over the glaze.
