Love At First Bite?

Someone once told me that the Instant Pot community is essentially a cult. Well, if that’s the case, then pass the Kool-Aid.

Jokes aside, I cannot believe that I waited so long to join the Instant Pot trend. Initially, I wasn’t sure I would use it enough to warrant the purchase; after all, I already had a slow cooker I barely used. Besides, what does a pressure cooker even do? It was only after watching many, many YouTube videos that I decided it was something I needed in my life (perfect Basmati rice in 6 minutes? Without soaking? Sign me up).

All that was to left was to decide which model I wanted, but with so many options, this took longer than expected. 7-in-1, 9-in-1, 10-in-1… 3 Quart, 6 Quart, 8 Quart… even a WiFi enabled Smart version. I had no idea which one to pick.

The model that I ended up getting is the Instant Pot IP-DUO Plus60 Electric Pressure Cooker, 6 quart 9-in-1. I was lured in by the mysterious Yogurt and Cake settings, and the 6 quart size seemed perfect for our little family of two.

I wish I had an amazing story about how the first thing I cooked in it changed my life… but that would not be the truth. In actuality, the first thing that I cooked in my shiny, new Instant Pot was rice… for my dog. Mr Morty somehow pulled a Houdini and escaped his crate; after which he helped himself to an all-you-can-eat cat food buffet. Needless to say, the result was a bit of an upset stomach. So rice for dinner it was.

I have since been able to use it for a variety of different recipes, and wow! Nearly every one has turned out better than I expected (with the exception of some muffin bites that were a little too dense). I will be using this blog to share the recipes that I make, complete with comments and the final results.
