Equipment

Ingredients

  • 1 cup yellow or white potatoes peeled and diced
  • 1 cup sweet potatoes peeled and diced
  • 2 1/2 cups elbow macaroni
  • 1 cup vegetable broth
  • 2 cups water
  • 1 tbsp olive oil

Sauce Ingredients

  • 2 cloves garlic
  • 1/4 cup cashews raw
  • 1 tbsp apple cider vinegar
  • 1/4 cup nutritional yeast
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 cup olive oil
  • 1/4 cup water

For Topping (optional)

  • pinch smoked paprika
  • pinch cayenne pepper

Instructions

  • Put pasta and water in the bottom of the Instant Pot. Put the trivet in the bottom, with the steamer basket on top. Place the potatoes in the steamer basket. Put the lid on the Instant Pot, turn the knob to Sealing, and set to High Pressure for 4 minutes.
  • When the time is up, do a quick release. Transfer the potatoes to a blender, add the sauce ingredients. Blend until smooth. Mix the sauce into the noodles until they are all coated.
  • Serve topped with smoked paprika and cayenne, if desired.
