Instant Pot Glazed Carrots

I have a super quick post for you today, since these Instant Pot glazed carrots are so easy! I was looking for an easy side to go with my Glazed Ham and Scalloped Potatoes, and these carrots reminded me of the ones my Gammie always used to make. You can use either sliced carrots or baby carrots for this recipe, and it can be adjusted depending on how many people you need to serve. There were just two of us, so I scaled it back when I was making it for the photos.
Steam the Carrots
Put 1 cup of water in the bottom of the Instant Pot. You will need either a Steamer Basket or trivet to hold the carrots. I found the steamer basket easier than trying to pile the carrots on the trivet without them falling.
Put the carrots into the steamer basket and lower into the pot. Put on the Instant Pot lid, turn the knob to Sealing, and set to High Pressure for 2 minutes. For softer carrots, increase the time to 3 minutes.
Glaze the Carrots
When the time is up, perform a quick release. When all the steam has vented, remove the lid. Carefully remove the steamer basket from the Instant Pot and set aside. I like these silicone mini mitts for removing hot items from my Instant Pot.
Dump the water out of the Instant Pot and dry the liner. Return it to the base and set to Saute. Heat the butter in the bottom of the pot, and stir in the brown sugar until dissolved. Add the water or orange juice, thyme, salt and pepper. Allow the glaze to thicken slightly before adding the cooked carrots. Mix the Instant Pot Glazed Carrots until well coated.

Ingredients
- 4 medium carrots sliced in 1/2 inch slices
- 2 tbsp butter (or vegan butter)
- 2 tbsp brown sugar
- 1 tbsp water or orange juice
- 1 tsp fresh thyme
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Put 1 cup of water in the bottom of the Instant Pot. Put carrots in a steamer basket or pile on a trivet. Put the lid on the IP, turn the knob to Sealing, and set to High pressure for 2 minutes. For softer carrots, cook for 3 minutes.
- When the time is up, do a quick release. When venting is complete, carefully remove the steamer basket and set aside. Dump the water out of the pot and dry it.
- Return the liner to the base and turn on the Saute function. Heat the butter. Stir in the brown sugar until it is dissolved. Add the water or orange juice, thyme, salt, and pepper. Cook until it slightly thickens.
- Return the carrots to the pot, and mix to coat.
