Instant Pot Vegan Mac and “Cheese”

Hey all you cool cats and kittens (has anyone else fallen into the isolation-induced desperation of watching Tiger King on Netflix?). I am back with another vegan-friendly recipe for my herbivore readers. This Instant Pot Vegan Mac and “Cheese” is so creamy and delicious, you may not miss the cheese. What’s even better, is that it sneaks in some veggies in a way that kids don’t suspect. The Little ate two huge bowls of it, so I would say it is kid approved.
Cook the Pasta and Potatoes
Put the pasta, vegetable stock, water, and 1tbsp of olive oil into the bottom of the Instant Pot. Place the trivet on top, and then the steamer basket . Peel and cube the potatoes and sweet potatoes, place in the steamer basket.
Put the lid on the Instant Pot, turn the knob to Sealing, and set to High Pressure for 4 minutes.
Make the Sauce
When the time is up on the Instant Pot, perform a quick release.
Put the remaining ingredients in a blender, add the steamed potatoes. Blend until smooth. Stir the noodles, and then add the sauce. Mix until all noodles are coated in sauce.
I topped my Instant Pot Vegan Mac and “Cheese” with a bit of smoked paprika and cayenne, for a little bit of smoky heat.

Instant Pot Vegan Mac and "Cheese"
Equipment
- Instant Pot
- Steamer Basket
Ingredients
- 1 cup yellow or white potatoes peeled and diced
- 1 cup sweet potatoes peeled and diced
- 2 1/2 cups elbow macaroni
- 1 cup vegetable broth
- 2 cups water
- 1 tbsp olive oil
Sauce Ingredients
- 2 cloves garlic
- 1/4 cup cashews raw
- 1 tbsp apple cider vinegar
- 1/4 cup nutritional yeast
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 cup olive oil
- 1/4 cup water
For Topping (optional)
- pinch smoked paprika
- pinch cayenne pepper
Instructions
- Put pasta and water in the bottom of the Instant Pot. Put the trivet in the bottom, with the steamer basket on top. Place the potatoes in the steamer basket. Put the lid on the Instant Pot, turn the knob to Sealing, and set to High Pressure for 4 minutes.
- When the time is up, do a quick release. Transfer the potatoes to a blender, add the sauce ingredients. Blend until smooth. Mix the sauce into the noodles until they are all coated.
- Serve topped with smoked paprika and cayenne, if desired.
